Chocolate Peanut Butter Banana Bread Pudding!

yup...I did it again!  Maya comes home with whole wheat challah rolls that we never finish.  So I make a healthy challah bread pudding to last the week.  Perfect for breakfast, snack or desert.  Just warm up and serve!

This is a kid friendly one so make sure you get them ready for some fun too!  you can have them pick the ingredients and have them help you make too. Of course be mindful of any allergies as you can substitute everything in this recipe.

Ingredients: 2 eggs, 6-8 whole wheat challah rolls, 1.5 cup chocolate almond milk, 2 bananas, peanut butter, chopped lindt dark chocolate (optional), vanilla bean, cinnamon,  1/2 cup coconut milk.  All of these can be substituted of course...that's where you get to be creative. 

Other options: I also like to use mango, apple, craisins, blueberries, apple sauce, pumpkin butter, pineapple, almond butter, etc.  You can use frozen or fresh too. 

Cut up bread, chocolate, peanut butter and fruit into bowl.  Wisk eggs and all other ingredients in a separate bowl.  Grease bunt pan and combine all ingredients. Don't stir too long or it will become more dense.  Bake for 350 until a dry fork can be put in and out.
