This meal only took 10 minutes to make! I shred the zucchini with a gadget called the veggetti. i always have individually prepacked tilapia in my freezer. they take no time to defrost or just leave some in the fridge overnight. Then I threw in a skillet some coconut oil & added turmeric, curry, ginger, onion, garlic, & lemon salt powder. Then I added the shredded zucchini and tilapia and boom! This dish will have your taste buds dancing and you guilt free! Enjoy!

Id like to share a wonderful story about a woman I am grateful to have gotten to know this past year thru the South Shore Tri Coach team. Her name is Liz Moloney Fernandez and she is a mom to three beautiful young boys. Over the last two years she has trained and raced in the triathlon sport. This past summer I was fortunate to be at ironman lake placid to cheer on my SSTC teammates and watched her qualify and earn an invitational spot into the worldwide Kona Ironman event set for sunday, October 12, 2014.
This event is a true celebration of athletes who have overcome all odds, endured gruelling workouts, and made many sacrifices to compete among the best in the sport. As she shines at one of her many accomplishments tomorrow in Hawaii...I am truly inspired by her and her familys dedication and unwavering commitment to her goals. Thank you Liz and the entire Moloney Fernandez crew for helping us moms see how anything is possible! Congratulations on such a wonderful accomplishment and thank you for showing us that playing small serves no one...we will be tracking your race but more importantly. ..we are forever inspired by your journey! |
