Our classes create a fitness adventure using all types of imaginary playful poses and movement which can incorporate hula hoops and glow in the dark accessories as well. yup...I did it again! Maya comes home with whole wheat challah rolls that we never finish. So I make a healthy challah bread pudding to last the week. Perfect for breakfast, snack or desert. Just warm up and serve!
This is a kid friendly one so make sure you get them ready for some fun too! you can have them pick the ingredients and have them help you make too. Of course be mindful of any allergies as you can substitute everything in this recipe.
Ingredients: 2 eggs, 6-8 whole wheat challah rolls, 1.5 cup chocolate almond milk, 2 bananas, peanut butter, chopped lindt dark chocolate (optional), vanilla bean, cinnamon, 1/2 cup coconut milk. All of these can be substituted of course...that's where you get to be creative.
Other options: I also like to use mango, apple, craisins, blueberries, apple sauce, pumpkin butter, pineapple, almond butter, etc. You can use frozen or fresh too.
Cut up bread, chocolate, peanut butter and fruit into bowl. Wisk eggs and all other ingredients in a separate bowl. Grease bunt pan and combine all ingredients. Don't stir too long or it will become more dense. Bake for 350 until a dry fork can be put in and out.

Looking back at reminiscing about some key moments. I made a decision I was going to learn to swim in september 2012, borrowed the total immersion book from the library and got a groupon to the JCC in october, got in the pool for the first time and started to learn to float and swim on my back.
Hurricane sandy put us in the hotels for two months and my training was put on hold. I then joined xsport in december and didnt get back in the water until january.
I registered for the tobay tri in January hoping to train from that point forward. With lots of set backs including knee injury, eye infections, colds, life, a failing business due to the storm, trying to find a coach, fixing our home and moving back in, believing in the wrong people and losing trust in others, having to reinvent myself and my business, & accepting that I must shut down a franchise after 6 years of blood sweat and tears, committing myself to teaching yoga to kids which put all training on hold for almost two months, completing a 7 month 200hr yoga certification program, starting a bike safety program in LB, and all the challenges of motherhood....here I am a week before my first triathlon and knowing that this journey was truly intended for me.
Learning to overcome challenges we face is the true accomplishment. No matter what happens on aug 24th I have already won! Thank you for all the love and support! Its just the beginning! Whos joining me next year?

When times are uncertain (not bad or good), that's the time to reflect, pause and appreciate the gift of time. Know that every choice you make is a blessing and a doorway for your mind to create.

Our children are the passengers in our life. Make it a great ride, take it slow, enjoy the journey, see what they see, point out the things they don't, take the turns with grace, smooth over the bumps, laugh at the unexpected ,honor & respect their machine and teach them how to drive on their own each day.
Once you genuinely practice equanimity in your life where you have comfort pausing in moments of thought, reflecting in moments of decision and owning moments of intention which leads towards a reaction of processed thought, that is when the practice of gratitude initiates.
Our focus becomes pure and unwavering, focused and passionate. We are able to find the beauty in the world around us. The dull becomes bright, the dim becomes light, the struggles become welcome, the growth becomes limitless, the journey becomes profoundly filled with epiphanies and joy.
It is from there we create a life most can only dream of. Here's a little read about gratitude. Yet another thing WE CAN control in our life. Aka the cool aid!
Where we are going we may not know, where we are we may not stay, where we were we may not judge because WHO we become can start right now!
